We are looking for a well-experienced Ethnic Food Cooks for “Ascari Enoteca” located at 1111 Queen St E, Toronto, ON M4M 1K7, Canada.

JOB DUTIES:

Prepare and cook traditional Italian dishes with authenticity and care, including fresh handmade pastas, classic risottos, antipasti, and regional mains inspired by Southern and Northern Italy.

Execute recipes with precision, honouring Italian culinary traditions while upholding Ascari's kitchen's visual and flavour standards.

Participate in daily prep, including preparing soffritto, slow-cooking ragù, marinating meats, kneading pasta dough, and crafting sauces from scratch using time-honoured methods.
Operate specialized kitchen equipment such as pasta rollers, dough extruders, grills, ovens, and charbroilers with efficiency and safety. -
Monitor food safety and storage protocols with particular attention to the handling of Italian staples such as cured meats, aged cheeses, and preserved vegetables.

Collaborate closely with the sous chef and brigade during service to ensure smooth coordination and timely execution of all dishes, especially during peak hours.

Respect and adapt traditional recipes to meet dietary needs or guest preferences, without compromising the integrity of Italian flavours and ingredients.

Maintain a clean, well-organized workstation and ensure mise en place is consistently prepared with high-quality, fresh components.

Inspect produce, meats, and dairy for quality and freshness, emphasizing the use of seasonal and locally sourced Mediterranean ingredients.

Assist in receiving deliveries, inspecting ingredient quality, and storing products according to best practices to minimize waste and preserve flavour.

Offer input during menu planning and development, sharing knowledge of regional dishes, presentation styles, and preparation techniques.

Help train junior staff in authentic Italian cooking techniques.

Practice inventory awareness and minimize waste by utilizing all ingredients efficiently and creatively.

Perform additional duties as assigned by kitchen leadership in support of overall kitchen operations.
Prerequisites:
Education: Secondary School or equivalent
Experience & Skills: 3 years to less than 5 years of experience in the food industry
Language: English
Annual Salary: $53,200 to $56,000 for 30 to 40 hours per week
Starting Date: As soon as possible
Terms of Employment: Full-time and permanent
Benefits: 4 % Vacation Pay
