We are looking for well-experienced Ethnic Food Cooks for “Abrielle” located at 355 King St West, Toronto, Ontario, M5V 1J6, Canada.

JOB DUTIES:

Prepare and cook a variety of Mediterranean dishes inspired by the coastal regions of southern France, Italy, and Spain, including grilled seafood, braised meats, seasonal vegetable preparations, fresh pastas, and tapas-style plates.

Execute recipes using traditional Mediterranean techniques such as slow braising, olive oil poaching, wood-fire roasting, and cold emulsions (e.g., aioli, vinaigrettes).

Create house-made condiments, sauces, and spreads including romesco, salsa verde, olive tapenade, and infused oils, highlighting the use of citrus, herbs, and preserved ingredients.

Perform daily mise en place, including marinating food with fresh herbs and citrus, segmenting seasonal fruits, curing fish, and preparing legumes and grains (e.g., lentils, farro).

Use and maintain specialized kitchen equipment such as planchas, salamanders, charbroilers, and wood-fired ovens in a safe and efficient manner.

Monitor food safety standards, especially with high-flavour Mediterranean ingredients like anchovies, preserved lemons, aged cheeses, and shellfish.

Adjust dishes as needed for dietary preferences (e.g., gluten-free, vegetarian), maintaining core Mediterranean flavours and integrity.

Receive and inspect deliveries, rotate stock, and minimize food waste through efficient preparation and proper storage of fresh and preserved ingredients.

Collaborate with the kitchen team during service to ensure timely and coordinated plating of dishes that reflect Abrielle’s rustic yet elegant presentation style.

Assist in training junior kitchen staff in preparation techniques and regional Mediterranean cooking styles.

Contribute to seasonal menu updates with ideas rooted in Mediterranean coastal cuisine, emphasizing freshness, simplicity, and balance.
Prerequisites:
Education: Secondary School or equivalent
Experience & Skills: 3 years to less than 5 years of experience in the food industry
Language: English
Annual Salary: $53,200 to $56,000 for 30 to 40 hours per week
Starting Date: As soon as possible
Terms of Employment: Full-time and permanent
Benefits: 4 % Vacation Pay
