Description
We are looking for a well experienced “Chef De Partie” for The Food Dudes Inc. located at 24 Carlaw Ave Toronto, ON M4M 2R7, Canada.

Tasks and Responsibilities:
Plan, lead, and execute daily pastry production (viennoiserie, entremets, plated desserts, celebration cakes) with flawless timing, taste, and presentation.
Design seasonal dessert menus and chef’s specials; engineer recipes and costings to hit margin and waste targets.
Customize and Innovate new pastry desserts (nut-free, eggless, gelatin-free, gluten-aware, vegan) with validated cross-contact controls and document gold-standard specs/SOPs.
Create emergency contingencies (ingredient swaps, partial bakes, décor alternates) to protect service during supply or equipment disruptions.
Build master production plans for holidays and events (Valentine’s, Mother’s Day, weddings), including pre-orders, pickups, and last-mile plating guides.
Standardize finishing techniques (tempering curves, glazing viscosity, mousse aeration, lamination turns) and lock in visual brand standards.
Lead, schedule, and mentor pastry cooks/assistants; run mise en place checks and pre-service tastings for consistency.
Enforce Ontario food-safety, sanitation, allergen-control, and temperature-log practices (HACCP-style) across prep, service, and display.
Optimize inventory and yields (FIFO, batch planning, blast-chill/cool-down logs) to reduce waste and protect food cost.
Guard quality at every pass: portion control, finish standards, freshness rotation, and impeccable plating.
Build a pastry “mise kit” for the pass (garnishes, sauces, quenelles, micro-herbs) to accelerate plate-up during peak fire times.
Forecast, requisition, and receive pastry ingredients; set pars for dairy, chocolate, purées, and yeasted doughs; reconcile delivery variances.
Maintain and calibrate ovens, mixers, sheeters, thermometers, and blast chillers; coordinate repairs to minimize downtime.
Prerequisites:
Education: Secondary School or equivalent.
Experience & Skills: 5 years or above, preferably experience in culinary or equivalent.

Hourly Rate: $36.00 to $38.00 per Hour for 30 to 40 hours per week
Starting Date: As soon as possible
Terms of Employment: Full time and permanent
Benefits: 4 % Vacation Pay
